Kodo Millet(Varagu) Salad

Though most of the millets have many nutritional benefits, kodo millet is one that has a good protein content and very high in fibre too. They are also rich in vitamin B6, folic acid and contains minerals like calcium, iron, magnesium, potassium and zinc. It has many anti oxidation and anti obesity properties. This is a heart healthy salad that can be included in our diet regularly.

Kodo Millet vegetable salad
Cooking time: 4 mins
Serving: 2

Ingredients:
Kodo millet / varagu - 1/4 cup
Black channa - 1/4 cup (boiled)
Carrot - 1/4 cup (grated)
Cabbage - 1/2 cup (chopped)
Cucumber - 1 (finely chopped)
Spring onion - 1 stalk
Coriander leaves - few (chopped)
Lemon juice - 1 tspn
Pepper powder - 1/2 tspn
Olive oil - 1 tspn
Salt to taste

Method:
1. Cook the millet in Pressure cooker for 1 whistle. Wash the millet and add 1/2 cup of water (minus 2 tbsn).
2. Fluff it with a fork. Cool down the millet completely.
3. In a wide bowl add all the ingredients. Mix well.
4. Heart healthy millet salad is ready to serve.

Notes:
You can do the same receipe with other millets too.
Add sprouts if you like.
If your millet seems sticky spread it in a plate with a spoon of oil. It will become grainy once it cools down.
You can cook the millet in open pot too as it cooks quickly.
